2 red onions, cut into large dice
1 yellow pepper, same as above
1 red pepper, same as above
1 pt brussel sprouts, trimmed & halved
2 small zucchini, halved & cut in 1/2 inch chunks
3 T. olive oil
1 T. rosemary, chopped
1 T. thyme, chopped
salt & pepper

Directions:
Directions:
Heat the oven to 400F. Combine the vegetables in a large roasting pan. Drizzle with the oil, rosemary, thyme, salt and pepper and toss well. Roast 45 minutes stirring once or twice. Serve at room temp. or re-heat just before serving if made ahead.

Serves 4
