1 1/2 c. flour
1 c. sugar
1/3 c. baking cocoa
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1/2 c. brewed coffee, cold
1/2 c. vegetable oil
3 tsp. cider vinegar
3 tsp. vanilla extract

3 T. semisweet chocolate chips
3 T. milk chocolate chips
1/3 c. butter, softened
2 c. confectioners sugar
1 to 2 T. brewed coffee, cold
1/2 c. chocolate sprinkles

Preheat oven to 350.

In a small bowl, combine flour, sugar, cocoa, baking soda and
salt. In another bowl, whisk the eggs, coffee, oil, vinegar and
vanilla. Add to dry ingredients and mix well.

Fill paper-lined muffin cups three-fourths full. Bake 20 - 25
minutes or until toothpick comes out clean. Cool for ten
minutes before removing from pan. Continue to cool on wire

For frosting: Melt chips over low heat, stirring until smooth.
Transfer to mixing bowl, add butter and beat until blended.
Gradually beat in confectioners sugar and coffee. Pipe
frosting onto cupcakes and top with sprinkles.
