3/4 lb. (4-5) cups spinach
2 15 oz. cans water packed artichoke-washed, drained, sliced
1 clove garlic
2 tsp lemon zest
1 T. lemon juice
2 T. red wine vinegar
1/4 -1/3 cup olive oil
a little sugar
shredded Parmesan

Mix garlic, zest, lemon juice, vinegar, and olive oil, and sugar. Toss with salad ingredients.
