6 cups chicken broth
2 T. cornstarch and cold water
1 T. soy sauce
1/2 tsp. sugar
2 eggs slightly beaten
2 green onions
salt and pepper

Directions:
Directions:
In large saucepan, heat broth to boiling. Blend cornstarch with water to make smooth paste. Stir in soy sauce and sugar. Slowly stir in broth. Bring to boil and simmer until clear, stirring constantly. remove from heat. Gradually add eggs, stirring until eggs separate in shreds. Add green onions. Season and serve.

Mom and I took a Chinese took class together when I was in HS. I still remember how much fun I thought that was. I still make most of the recipes we learned in that class and this was one of them.
