When I was working at Saint Mary's, there was a young music teacher who worked there for a year. Terri was an awesome cook and she served this to me, along with chicken and rice. It was delicious and became one of those recipes I had to make again and again. She told me it came from a cookbook called the Silver Palate by Julie Rosso and Sheila Tukins.
