3/4 cup sugar
1/4 cup shortening
1 egg
1 cup milk
1/2 tsp. salt
2 cups flour
2 tsp. baking powder
2 cups blueberries
1/3 cup flour
1/2 cup sugar
1/2 tsp. cinnamon
1/4 cup butter

Directions:
Directions:
Heat oven to 375. Grease and flour a 9 x 9 pan. Mix sugar, shortening and egg. Stir i milk. Measure flour and blend dry ingredients and stir in. Spread 1/2 batter in pan. Mix flour, sugar, cinnamon, and butter. Spread 1/2 struesel mixture and then add remaining batter and sprinkle remaining strudels on top. Bake for 45-50 minutes. It is delicious served warm with cream.

When I was first out of college I worked at Parkside Manor in Stuart Nebraska. That was a hard job for me because the head cooks had been working there more years than I had been alive and they didn't always trust that I had much to contribute to THEIR kitchen! I was the dietary manager and it was my job to make sure they followed the menu's as the dietitian had set them up. They didn't like to do that because the stock recipes and menus were not nearly as tasty as their own. I have to admit, it was hard to get too upset on the days they made the Blueberry Coffee Cake. I've never had any better.
