1/2 c. finely chopped carrot
1/2 c. finely chopped onion
1/4 c. finely chopped celery
2 t. butter
1/4 c. flour
1 c. chicken broth
1/4 tsp. salt
2 c. light cream or milk
8 oz. American cheese, cubed (must be American)

Directions:
Directions:
In large pot cook carrot, onion, celery in butter on low heat until
tender. Stir in flour to make a paste, then add broth and salt.
Cook until thickened and bubbly, stirring frequently. Stir in cream
and cheese on med-low heat. Do not boil. Continue to stir
frequently until the cheese has melted.
