4 skinless and boneless chicken breasts
fresh mushrooms, cut in half
fresh spinach
3 tablespoons butter
2 tablespoons olive oil
flour and bread crumbs for breading
1 egg

Directions:
Directions:
Boil fresh spinach in salted water. Saute mushrooms in 1 tablespoon butter. Bread chicken in flour, egg, and bread crumbs. Melt remaining butter and add olive oil to a pan. Saute chicken; cook thoroughly.

Serve: Drain spinach well and place a serving on plate. Top with chicken then mushrooms. Spoon melted butter over the top.
