1/3 c. extra virgin olive oil
6-10 cloves crushed garlic (to taste)
1/2 c. chopped onions
1/4 to 1/3 c. sliced sun-dried tomatoes
1 tsp dried basil
1 tsp dried oregano
fresh ground black pepper (to taste)
salt to taste
dash coriander (optional)
8 oz small shell pasta of your choice
fresh grated parmesan cheese

Directions:
Directions:
In small skillet, saute all ingredients except pasta. Do not let garlic brown. Allow tomato mixture to sit as long as you wish to let flavors marry.

Cook pasta according to directions. Reheat tomato mixture; toss together with pasta and fresh parmesan cheese. Serve.

Make this a main dish meal by thinly slicing two skinless boneless chicken breasts and adding to tomato mixture near the end, when onion is tender. Briefly saute till chicken is no longer pink.
