7 c. cubed summer squash
1 c. onions, chopped
1 clove garlic, chopped
salt & pepper to taste
1/4 c. fresh parsley, chopped
2 slices white bread
2 eggs, beaten

Directions:
Directions:
Boil and drain squash. Saute onions and garlic. Add salt, pepper, and parsley. Dunk 2 slices of white bread in water, then squeeze water out. Crumble bread into onion mixture. Add squash. Cook together for a few minutes. Spray Pam in glassed casserole dish. Beat together 2 eggs and add to bread mixture. Pour mixture into casserole dish. Sprinkle with buttered cracker crumbs. Bake at 350 for approximately 20-30 minutes.

This recipe came from one of our favorite Food Network personalities, Paula Dean. If you don't know Paula, you must watch for her. She is "one of us", a true Southern cook who doesn't mind cooking with butter! Yes, REAL butter...and lots of it! Be sure to catch her on TV!
