16 oz. white frozen corn 2 - 2 1/4 oz. can olives, sliced 1 med. sweet red pepper, chopped 1 small onion, chopped 5 cloves garlic, crushed 3 avocados 1/3 c. olive oil 3 T. cider vinegar 1 can black beans (drained) 1/2 tsp. salt 1/2 tsp. pepper 1/4 tsp. lemon juice
Chop all and let flavors meld in the refrigerator several hours. Add avocado before serving. Served with tortilla chips.
