1 large yellow onion (finely chopped)
2-3 tbsp. olive oil
Parsley (fresh chopped is best)
1/2 to 1lb skinless andouille sausage-sliced.
Cajun seasoning
Louisiana Hot Sauce or (cayenne pepper sauce)
2 c. canned chicken stock or broth
1 c. water
1 1/2 c long grain white rice
1 med can red beans
1 can of your favorite beer. ( or a six pack for a good time, but only one is needed for the recipe)

Heat olive oil in large pan over medium heat. Saute onions and parsley until onions are clear.
In separate skillet, brown meat slowly until thoroughly browned.Add rice to onions and cook until nicely browned.(usually about ten minutes.)
To the rice add 2 cups chicken broth and 1 cup water. Bring to boil, reduce to low heat and cover. Set a timer and cook for exactly 15 minutes.
When the rice has finished cooking, add red beans, meat, 1-2 tbsp Cajun seasoning, a can of beer, and hot sauce. Start with 1-2 tbsp of hot sauce.( you can always add more at the table.)
Simmer uncovered about 20 min. over very low heat. Turn off the heat, cover and allow to sit for about 30 minutes.

You may substitute any spicy sausage for the Andouille sausage.
Excellent served with French Bread and your favorite wine.


(Don't forget to shotgun the rest of your six pack of beer for the full affect of the alcohol........:)
