2 lbs. lean ground beef (I use 95%)
2 15 oz. cans Brooks Mild chili beans
1 15 oz. can Brooks Hot chili beans
1 can "Chili Ready" diced tomatoes (any brand)
1 pkg. McCormick's Hot Chili seasoning
1 large can tomato juice
1 large yellow onion
Salt and Pepper
1 8 oz. pkg shredded cheese (any-I use cheddar)


Directions:

Dice onion. Brown ground beef, salt and pepper (your discretion) and 1/2 onion in large skillet/saucepan. Drain meat. In large saucepan/stock pot, place meat, beans,tomatoes and seasoning. Add tomato juice to your desired consistency- I use the whole can. Cook on medium/high heat until just boiling, stirring constantly. Change heat to low setting and simmer for 1 hour, stirring occasionally.
Place chili in bowls, top with shredded cheese,crackers and some of remaining diced raw onion.
ENJOY!!
This is even better the next few days for leftovers!!
