12 oz fettuccine (whole wheat)
2 tsp vegetable oil
1 ˝ tsp crushed garlic
1 cup chopped onions
4 cups thinly sliced sweet peppers (combo of green, red,orange and/or yellow)
2 1/2 cups chopped tomatoes (if using canned tomatoes, drain the juice)
3/4 cup chicken/vegetable stock
1/3 cup grated Parmesan cheese
Parsley

Directions:
Directions:
Cook pasta in boiling water according to package instructions or until firm to the bite. Drain and place back into pot. Keep pot off of burner.

In large non-stick skillet, heat oil; sauté garlic and onions until softened. Add sweet peppers and cook for 5 to 8 minutes on low heat just until tender.

Add tomatoes and stock. Simmer on low heat for 15 minutes, stirring occasionally. Pour drained pasta into skillet and toss with vegetables. Sprinkle with cheese, and toss. Garnish with parsley and serve.
