454 gm (1 lb.) Asparagus cut into pieces(trim ends off – just the tough part)
1 onion chopped
500 ml chicken broth
50 ml butter
50 ml flour
500 ml milk (I use 1% but any amount of fat content in the milk is fine–higher fat % makes a creamier soup)

Directions:
Directions:
Combine first 3 ingredients in stockpot.
Simmer until asparagus and onions are soft. This will take approximately 12-15 minutes. Set aside. Once cooled, puree mixture with a hand blender, blender, or food processor.
Make the white sauce: Melt butter in a saucepan over low heat. Slowly blend in flour. Stir until smooth. Add milk; cook, stirring constantly, until mixture thickens and begins to bubble.

Combine asparagus puree with the white sauce. Heat on low stirring constantly.

This recipe makes approximately 1 litre of soup (3-4 servings).
Sprinkle soup with grated cheese and serve with fresh bread.
I make this soup in large quantities and freeze in glass canning jars-works well for those busy Saturday lunches.
