Drippings from meat
Milk, Cream, Stock, or Potato water
salt and pepper to taste

Directions:
Directions:
Fry the meat and leave the drippings in the pan. Scrape the
bottom of the pan to get all of the brown pieces you can. Add 2
Tbs of flour to every 2 Tbs of drippings. Stir well and brow
slightly (this is a roux). Add 1 C. of liquid for every 2 Tbs of
dripping. Stir constantly and bring to a boil. Reduce heat and
simmer for 1 minute. Add salt and pepper to taste.

Granny sent this to me while I was in college. There were no
"real" measurements since she never measured anything. Good Luck!



*You can also make a roux by adding flour to a few Tbs of butter over med heat. Stir continuously. Roux should be a crumbly dough-like mixture. Do not let it brown! Add drippings and stock to finish. Be careful... it will thicken!
