1 cup walnuts finely chopped
1 large egg
1/2 cup dark brown sugar - packed
1 1/2 Tbsp. flour
1/4 tsp. cinnamon
1/8 tsp. baking powder
pinch salt

Directions:
Directions:
Preheat oven to 350 with racks in upper and lower third of oven. Line two baking sheets with parchment paper. In mixing bowl, beat egg until yolk and white are well blended. Stir in sugar and beat vigorously until mixture resembles grainy caramel. (About 1 minute) Mix in nuts, flour, cinnamon, baking powder and salt. Drop Tbsp. of batter onto baking sheet and flatten. Bake 5 minutes then switch position of pans in oven and rotate. Bake another 5-8 minutes or until the cookies are browned around edges. They harden as they cool. Cool completely on cookie sheet
