Yellow cake mix
4 cups chopped rhubarb
1 cup sugar
1 cup cream

Directions:
Directions:
Prepare yellow cake mix according to directions and pour into a greased 9 x 13 inch pan.

Mix rhubarb, sugar, and dump over the top of the cake. Pour cream over rhubarb and bake at 350 for 40-45 minutes.

This may be the easiest cake I have ever made. And I can't eat rhubarb that it doesn't conjure up memories of being little and picking it fresh. Dad always ate it raw, but I could never quite do that. However, this rhubarb cake, a rhubarb coffee cake, and strawberry rhubarb pie are among my favorite desserts.
