2 cups heavy cream
1 vanilla bean
4 large egg yolks
1/4 cups and 1 T. sugar
1/3 to 1/2 cup light brown sugar

Directions:
Directions:
Heat cream and vanilla over medium heat for 15 minutes-do not boil. Remove and let cool.

Beat egg yolks with mixer for 5 minutes and then add 1/4 cup and 1 T. sugar. Add about half of the cream mixture at a time and until well blended.

Pour into custard cups and place in baking pan. Fill the pan 1/2 way up outside of the custard cups and bake 35-45 minutes at 300. Sprinkle with brown sugar, and broil just long enough to carmalize. Chill.
