Ingredients: 8 bacon strips 1 1/2 pounds beef flank steak 4 cups fresh baby spinach 1 jar roasted sweet red peppers, drained 1 3 oz. package cream cheese, softened 1/4 cup milk 1 T. butter 1/4 tsp. pepper 1/2 cup crumbled blue cheese

Directions:Cook bacon strips and drain on paper towel lined plate.
Meanwhile, cut steak horizontally from the long side to within 1/2 inch of opposite side. Open meat so it lies flat; cover with plastic wrap. Flatten to 1/4 inch thickness.
Remove plastic. Place spinach over steak to within 1 inch of edges; top with red peppers. With the gain of the meat going from left to right, roll up jelly-roll style. Wrap bacon strips around beef and secure with toothpicks. Slice beef across the grain between bacon into eight slices.
Grill, covered, over medium heat for 5-7 minutes on each side or until meat reaches desired doneness. Discard toothpicks.
In a small saucepan, combine the cream cheese, milk, butter, and pepper. Cook and stir over low heat until just smooth. Stir in blue cheese and serve with pinwheels. |

Notes: This is one of those really good recipes that is really pretty too. It is great for guests if you are looking for a little something extra but but something that isn't too difficult to make.
