2/3 cup shortening
1 heaping cup white sugar
2 eggs beaten
1 tsp vanilla
2 cups sifted flour
1 tsp baking powder
1/2 tsp salt
2 large very ripe bananas
1 tsp soda
3/4 cup milk (room temperature)

Directions:
Directions:
Cream shortening and sugar together. Add eggs and vanilla. Beat until fluffy. Sift flour, baking powder, salt together. Peel banana and cut into pieces. Mash well into the soda. To the shortening/egg mixture add dry ingredients. Alternately with milk and banana mixture. When smoothly combined put into a deep, well greased 9 inch pan. Bang the pans a few times to remove bubbles.

Bake in 350'F for 45 to 55 minutes. Maybe iced with butter icing flavored with maple extract. Or left plain.

This was a recipe I found in a magazine years ago from the mother of "Tommy Hunter" a famous Canadian country singer.
