2 zucchini squash, peeled and cubed
2 eggs, beaten
1/4 cup milk
1 tsp baking powder
2 Tbs flour
1/2 lb. cheese, cubed
1/4 cup onion, diced
1/4 cup green pepper, diced

Directions:
Directions:
cook zucchini in a small amount of boiling water until almost tender (about 5 minutes); drain and let cool. Combine eggs, milk, baking powder, cheese cubes, onion, and green pepper. Stir in zucchini. Bake in a greased casserole dish at 350F for 35 minutes; let stand for 10 minutes before serving.
