1 c. sugar
4 T. cornstarch
1/2 t. salt
1 c. water
2 t. grated lemon rind
1/2 c. lemon juice
2 T. butter
4 egg yolks

Directions:
Directions:
Mix ingredients together in a double boiler, as it scorches easily. Cook heat on high.
Slowly add water to sugar, corn starch, and salt.
Cook and stir till smooth and thick. Add lemon rind, juice, and butter. Bring to boil and cook about 5 minutes. Add a bit of hot liquid to slightly beaten egg yolks, so they can be added to the hot mixture. Cook 1 more minute stirring constantly.
Chill.
Put between layers of your favorite cake layers. (White or yellow) Spread around the sides and the remainder on top.
