2 c. cooked yellow crook neck squash (boil and drain) 3/4 c. butter 1 t. salt 2 c. cheddar cheese, grated (divided) 1 c. evaporated milk 1 c. onion, finely chopped (optional) 2 eggs 2 c. Ritz Crackers (divided)
Saving 1/2 c of the cheese and cracker crumbs for topping. Mix all other ingredients and pour into a buttered casserole dish. Top with saved ingredients and bake at 350º for 30-45 minutes.
