1 lg. onion, diced
1 lg. green pepper, diced
1 lb. smoked sausage, cut in 1/4 inch slices
1 Tbsp. olive oil
4 cups cooked chicken
3 cups uncooked long grain rice
2 10 1/2 oz. cans french onion soup
1 14 1/2 oz. can chicken broth
1 14 1/2 oz. can beef broth
3 tsp. Creole seasoning
2 tsp. Tabasco
Fresh cilantro

Directions:
Directions:
Saute onion, pepper and sausage in hot oil in deep pot or dutch oven 4-5 minutes until sausage is browned. Stir in chicken and remaining ingredients and bring to a boil. Cover and simmer on low until rice is done, adding liquid as needed. Garnish with cilantro.
