1/2 cucumber
1/2 onion
1/2 avocado
1/2 tsp. crumbled oregano leaves
3 T. olive oil
2 T. wine vinegar
4 c. canned tomato juice
ice cubes
2 limes, cut in wedges

Directions:
Directions:
Cut off a few slices of cucumber and onion to save for garnish. Chop remaining cucumber and onion into small pieces. Put onion, cucumber, avocado, oregano, oil and vinegar into a serving bowl. Stir in tomato juice. Top with reserved cucumber and onion slices. Chill. Ladle into bowls, adding ice cubes and lime juice to taste.
