1 T olive oil
1 large yellow onion diced
1 1/2 lbs raw sweet potatoes in one in cubes
4 large garlic cloves crushed
1/2 t ground nutmeg
1/4 t or less cayene pepper
1/8 t white pepper (optional)
3 c strong vegetable broth
1 1/2 c coconut milk
1 inch segment ginger root grated
4 c baby spinach leaves chopped

Directions:
Directions:
In a soup pot heat olive oil. Add onion, sweet potatoes and garlic. Cook 10 minutes until potatoes are golden. Add cayenne pepper, and white pepper and cook 1 more minute. Stir in broth and coconut milk. Squeeze grated ginger over the pot to extract juice and discard pulp. Bring to a boil, reduce heat and simmer til sweet potatoes are tender apprx 10 minutes. Working in batches, puree soup til smooth and creamy. Return soup to pot and stir in spinach. Adjust seasonings and serve hot.
