1 lb baby spinach leaves 1 small red onion sliced thin 1/2 c chopped walnuts 1/2 c fresh blueberries 1/4 c crumbled feta cheese 2 T olive oil 1 T balsamic vinegar
In a medium bowl, toss together spinach, red onion and chopped walnuts. Add blue berries and feta cheese. Whisk together olive oil and balsamic vinegar. Drizzle over salad and serve at once. Pears or apple slices may be added.
