3 1/4 cup flour
1 1/2 tsp. salt
1 tsp. ground nutmeg
2 tsp. baking soda
1 tsp. ground cinnamon
3 cups sugar
1 cup vegetable oil
4 eggs
1/3 cup water
2 cup grated zucchini
1 tsp. lemon juice

Directions:
Directions:
Preheat oven to 350. Mix in a large bowl flour, salt, nutmeg, baking soda, cinnamon & sugar.
In second bowl, beat eggs & mix with oil, water, zucchini & lemon juice. Add wet ingredients into the dry & mix. Spray 2 loaf pans with non-stick spray. Pour mixture into pans. Bake for about an hour or until toothpick comes out clean.

After 30 minutes of baking, I add butter, cinnamon & sugar to the top. Nice topping.
