1 lb. Penne pasta
cooking oil
2 large red bell peppers
2 Tbsp. minced garlic
1/4 cup fresh basil
3 Tbsp. extra virgin olive oil
2 cups half & half
1/4 cup grated Parmesan or Romano cheese
4 Tbsp. butter or margarine
salt & pepper

Preheat your broiler. Coat red peppers light with olive oil roast under the broiler until skin is blackened. Let peppers cool for 45 min.Cook pasta according to package & drain. Remove skin (which should be easy to peel off now) & seeds. Chop into small pieces. Cook in skillet 3 tbsp oil, garlic, basil, & red peppers over med heat about 10 min. Pour mixture into the blender & puree, then return to skillet. (It's real hot!) Reheat to a boil then stir in half & half, & cheese. Cook until cheese has melted, add butter, season with salt & pepper & simmer another 5 mins.

7. Pour over pasta & serve.

*I always pour some oil into my boiling water with the pasta as it cooks. It helps keep the water from boiling over.
