3 eggs
2 cups sugar
1 cup oil
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoon cinnamon
1 tablespoon vanilla
3 cups grated unpeeled zucchini
1 cup chopped walnuts

Cream eggs, sugar and oil. Stir in flour, salt, baking soda, baking powder, cinnamon and vanilla. Add zucchini and walnuts. Pour into 2 well greased 9x5 loaf pans. Bake 1 hour at 350 or until toothpick comes out clean. Let cool in pan 15-20 minutes. Remove from pans and continue cooling.
