1 zucchini, cut into bite-size pieces
1 red bell pepper, cut into bite size pieces
1 yellow bell pepper, cut into bite size pieces
1 green bell pepper, cut into bite size pieces
1 red onion, cut into slices
1 package mushrooms, sliced
1 or 2 cloves of garlic peeled and chopped
3 T. olive oil
1 t. salt
1/2 t/ pepper

Directions:
Directions:
Heat the oven to 450. Place the vegetables in a large roasting pan. Toss with olive oil, salt, pepper, and garlic to mix and coat. Spread in a single layer in the pan. Roast for 30 minutes stirring occasionally, until the vegetables are lightly brown and tender.
