1/3 cup flour
3/4 cup sugar
pinch of salt
1 pint scalded milk
3 Tbsp butter
2 eggs separated
1 tsp orange extract
(see below directions for further ingredients)

Directions:
Cover 2 deep pie pans with a rich crust and bake as directed. Mix together flour, sugar and salt. Add scalded milk and butter. Cook for 5 minutes, add beaten yolks to thicken milk. Cook a few min., stirring constantly set aside to cool. Add orange extract (vanilla will do) and fill prepared crust. Make a meringue of the whites of the eggs whipped very stiff, and 1/4 sugar. Spread on pies and set in oven to brown. For Banana Pie add 3 sliced bananas to the mixture. For coconut add 1/2 cup shredded coconut.
