3 tbsp onion
2 tbsp grated carrot
3 tbsp margarine
3 cans chicken broth
1 can water
1/2 tsp each dry mustard & paprika
3 tbsp cornstarch
1/2 cup milk
1 cup mild cheddar cheese
1 cup beer
chopped, parsley

Cook onion and carrot in melted margarine over low heat until tender. Add chicken broth, water, mustard, and paprika. Cook over low heat another 15 mins. Blend cornstarch and milk. Slowly stir into soup. Add grated cheese and beer, stir until cheese is melted. Top with parsley
