- 1 1/2 lbs - pork pieces, or chicken thighs
- 3 tbsp - Soya sauce
- 1 - onion - sliced
- 1 bay leaf
- 1/2 cup - water
- 1 tbsp - granulated sugar
- 1/3 cup - vinegar
- 2 tbsp - vegetable oil
- 1 tsp - salt
- 2 cloves garlic - minced
- 1/4 tsp - pepper

- place all ingredients except oil in large saucepan or Dutch oven
- let stand 30 minutes
- simmer covered for 1 hour
- drain and reserve liquid
- heat oil in a skillet, brown meat
- place meat in serving dish
- drain off oil, and add reserved liquid, deglaze pan ( scraping meat and food bit from pan) bring to a boil
- pour over meat
- serve over rice
