3 Eggs
1 Cup Cooking Oil
1 Cup White Sugar
1 Cup Brown Sugar
2 Cups Grated Zucchini With Skin
2 Cups Plain Flour
1/2 Tsp Salt
1/4 Tsp. Baking Soda
1 Tsp. Cinnamon
1 Tsp. Vanilla
1 Cup Chopped Nuts

Combine all ingredients and mix thoroughly. Pour into 2 greased loaf pans. Bake at 325 for 45 minutes to 1 hour. Test for doneness by using a toothpick.
