Crust: 1 cup flour 1/2 cup butter or margarine 1/4 cup icing sugar
Topping: 1 cup white sugar 2 tsp grated lemon peel (opt) 2 tbsp lemon juice 1/2 tsp salt 1/2 tsp baking powder 2 eggs
Mix crust ingredients and press into ungreased pan. Bake 20 minutes at 350ºF. Combine topping ingredients. Mix about 3 minutes or until light and fluffy. Pour onto hot crust. Bake about 25 minutes. Let cool.
