5-6 apples peeled and cut into small chunks or slices
2 tsp cinnamon
2 cups plus 5 Tbs sugar
3 cups flour
1 cup cooking oil
1/4 cup orange juice
4 eggs
3 tsp baking powder
2 1/2 tsp vanilla
1 tsp salt

Prepare the apples and sprinkle with cinnamon and 5 tbs. sugar. Set aside
Preheat the oven to 350F. Beat together all the remaining ingredients. Pour half the batter into a greased 10" tube pan. Arrange half of the apples over it. Repeat these two layers. Bake about 1 1/2 hours or until cake test done. Let it sit in the pan on a rack for 20 minutes before removing from the pan to cool completely.
