3-4 lb chuck roast salt and pepper 2 tbsp olive oil
In a large dutch oven, add olive oil and heat over med-high heat. Add roast and brown on both sides. Remove from heat. Add enough water to fully cover the roast. Bring to a boil and reduce heat to medium. Cook 3 approx. hours or until meat is tender.
