1 1/2 c. vegetable oil
2 c. sugar
3 eggs
1 tsp. baking soda
3 c. flour
1 tsp. salt
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. all-spice
2 tsp. vanilla
3 McIntosh apples, chopped
1 c. pecans, chopped (optional)
Glaze:
1 stick butter
2 T. milk
1/2 c. brown sugar

Directions:
Directions:
Combine the oil, sugar, and eggs. Beat at medium speed for 3 minutes. Add dry ingredients and vanilla. Fold in apples and pecans. Bake in a greased tube or bundt pan for 1 hour and 20 minutes.
Glaze:
Bring butter, milk and brown sugar to as boil. Simmer for 15 minutes, stirring occasionally.
When cake is done, remove from oven, poke holes in warm cake and pour glaze over the top. Cool slightly and remove from pan. (May save some glaze to spoon over after remvoing from pan.)

This came from The Virginian Pilot years ago. I loved making it when we lived in Ohio on a cold snowy day. Made the house smell divine!
