1 1/3 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/3 c. sugar
1/2 c. butter
1 egg
1/2 c. raspberry jam

Filling:
1/2 c. butter
2/3 c. sugar
1/2 tsp. almond extract
2 eggs
1 c. chopped, blanched almonds

Directions:
Directions:
Preheat oven to 350. Grease a 9" layer pan with removable bottom.
Crust: Blend flour, baking powder and salt together in a small bowl. In another bowl, cream butter and sugar until light and fluffy. Add egg and mix well. Add the flour, baking powder and salt mixture. Press into the bottom and up the side of the prepared pan. Spread 1/4 c. jam over the dough. (I spread enough to cover; may be more than 1/4 c.) Cover with plastic wrap and refrigerate.

Filling: Cream butter and sugar. Add eggs one at a time and beat well. Add chopped almonds and almond extract. Spoon over jam layer. Bake 50 minutes. Cool in the pan. Carefully remove the side of the pan. Spread remaining 1/4 c. jam on top or enough jam to cover again. Drizzle top with frosting made with 1/2 c. sifted powdered sugar and 2 tsp. lemon juice.

I found this recipe years ago in a magazine. It has been a favorite of mine for brunches with an egg casserole and a bowl of fresh fruit. Very pretty; can do ahead and it is delicious!
