1 C.Cake Flour

7/8 C. sugar [3/4 c. + 2 Tbs.]

1- 1/2 C. Room temperature egg whites[ about 12 eggs]
3 Tbs. sugar
1-1/2 tsp. cream of tartar
1/4 tsp. salt
1-1/2 tsp. vanilla
1/2 tsp. almond extract

First sift together flour and sugar three times

In mixer at medium speed beat Egg Whites with3 TBS. sugar,cream of tarter,salt,vanilla and almond extract.
Then increase speed to highest number and beat until firm peaks are formed, scraping the bowl frequently
GRADUALLY ADD flour/sugar mixture 2 Tablespoons at a time By Hand. Fold this mixture slowly by hand using a rubber scrapper being careful to not deflate the egg white mixture
Turn the bowl a 1/4 turn as you fold in the flour/sugar mixture being sure to get to the bottom of the bowl

Push the batter carefully, with a rubber scraper into an ungreased tube pan, 10x14.
Lift the last portion lightly from the bowl into the pan being careful not to stir the batter

Cut carefully through the batter with a knife or steel spatula to break up large air bubbles. Be sure to even up batter so it is level and touches sides of the pan

Bake 375 degrees for 30-35 minutes. Top will spring back when lightly touched.

Deep cracks are typical for this type of cake

Immediately turn cake upside down on a soda bottle or funnel to allow to cool
Let cake hang until cold

To remove cake loosen from sides of pan with a rigid spatula or silver knife. Turn cake over and hit sharply to loosen
