1 T. paprika
2 1/2 T. salt
1 T. onion powder
1 T. garlic powder
1 T. ground red cayenne pepper
3/4 T. white pepper
3/4 T. black pepper
1/2 T. thyme
1/2 T. dried oregano leaves

Directions:
Directions:
Add all ingredients and mix with a fork. May be stored in a plastic container for repeated uses.

Melt butter.
Dip fish in butter; coating both sides.
Sprinkle with seasoning (to your spice level tolerance!)
Rub cast iron skillet with oil and heat to med-high heat.
Add fish and cook 2-3 minutes per side.
May be cooked inside or on the grill.

It is smokey if cooked inside. If cooked on the grill leave the skillet on the grill for 10 -15 minutes before adding the fish.
