"When I'm at a Chinese restaurant having a hard time with chopsticks, I always hope that there's a Chinese kid at an American restaurant somewhere who's struggling mightily with a fork."--Rick Budinich
6 white potatoes 3 sweet potatoes 1 bunch of parsley 1 green pepper 1 red pepper 3 medium onions 2 medium tomatoes 4 scallions 3 lbs of fresh cleaned whole saltwater fish cut into small pieces Salt & Pepper to taste
In a large kettle, gently saute' chopped onions, tomatoes, scallions, and peppers in oil. Next, add fish and cover with water. Cover and bring to a gentle boil. Add potatoes and parsley, reduce heat and simmer.
note: I have never had this with the peppers or tomato. In Cape Verde it was very simple with a little potato and sweet potato in an enjoyable broth. I have had it that way here in the states too...
