4 boneless, skinless chicken breasts

Stuffing: About 8 oz. crumbled feta cheese,.
1/2 cup Sun-dried tomatoes softened in
olive oil,
1/2 cup Calamata olives (pitted)

1 cup seasoned bread crumbs

Directions:
Directions:
Pre-heat the oven to 350. Mix together the feta cheese, sun-dried tomatoes and calamata olives. Gently slice open the chicken breasts to make a pocket in the middle.
Fill the pocket with the feta cheese, tomato and olive mixture. Brush the chicken with olive oil and coat with bread crumbs. Bake uncovered about 20-25 minutes until bread crumbs are browned, but making sure to not overcook.

If you cannot find the sun-dried tomatoes in olive oil, you can get the dried ones and boil them in a small amount of water until softened. Then just add a little olive oil to them.
This makes an impressive company dish. You can serve it with rice, a green vegetable and the Mandarin Orange Salad.
