2 potatoes
one medium onion
one bell pepper
one red pepper
olive oil
salt and pepper

Directions:
Directions:
Scrub Potatoes and leave the skin on. Cut into bite size chunks. Cut the Onion and Peppers into chunks. Pre-heat oven to 375. Place Potatoes on a flat baking sheet and drizzle with olive oil. Salt generously and sprinkle with pepper. Bake about 15 minutes. Add Onions and Peppers at this time and drizzle with more olive oil. Add more salt and pepper. Bake another 20 minutes or so until all vegetables are tender but not too limp.
