1 cup canola oil
3 eggs
2 cup sugar ( I use less)
2 cup zucchini greated
2 tsp vanilla
3 cup flour
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
3 tsp cinnamon
1 cup nuts

Directions:
Directions:

Mix the dry ingredients with the wet ones and pour into 2 greased loaf pans. Sometimes I add mini chocolate chips.
Bake @ 325 for 1 hour. Toothpick comes out clean.
