2 Large Eggs ¼ Bag of Baby Spinach 5 or 6 Kalamatta Olives Handful of Feta Cheese Oregano Milk ¼ or less White Onion 1 Clove of Garlic
Dice white onion and olives. Crush and slice garlic into small pieces. Add onion and garlic into a skillet. After letting the onion and garlic cook for about 3 or 4 minutes, add spinach and olives to the skillet. Season with Oregano. Remove from skillet.
Mix eggs, milk, feta cheese and oregano in a bowl. Add skillet mixture to bowl and stir.
Place omelet mixture in skillet. Let cook until it can be flipped. Fold into omelet. Season with pepper to taste.
