1 egg (beaten)
1/4 cup plain bread crumbs
2 boneless skinless chicken breasts, pounded to 1/2 in. thickness
2 T. vegetable oil
1 cup ready to use chicken broth
1/4 pounds fresh mushrooms cut in half or 1 can
1/4 cup shredded Colby-jack cheese
1 pkg. (3 oz.) chicken-flavored Raman noodles, broken up.

Directions:

Place egg in shallow dish. Place bread crumbs in another shallow dish and add the seasoning packet from the noodles, mix well. Dip chicken in the egg, then in the bread crumb mixture, coating completely. In a large skillet, heat oil over medium heat. Add the chicken and cook 2 - 3 minutes per side. Transfer onto platter. In same skillet, combine broth, mushrooms and broken up noodles, cook 4 - 5 minutes over medium heat or until noodles are tender. Reduce heat to medium low and return chicken to skillet. Sprinkle top with cheese. Cover and cook 4 - 5 minutes or until cheese is melted.
