2/3 cup butter
1 1/4 cups brown sugar
1/3 cup sugar
1/4 cup dark molasses
1 1/2 cups hot water
2 eggs
2 cups fruits and peels
8 oz chopped dates
1 cup nuts (pecans and Brazil nuts are best)
3 cups flour
2 tsp cinnamon
1/2 tsp nutmeg

Directions:
Directions:
Combine butter, brown sugar, sugar, dark mollasses, and hot water in sauce pan and boil gently for three minutes. Cool in large mixing bowl. Beat in eggs. Then add fruits and peels, dates, and nuts. In separate bowl, sift together flour, cinnamon, and nutmeg. Gradually add to the fruit mixture, beating well. Pour into greased tube or bunt pan and bake at 275 degrees for two hours. Cool on wire rack.

My Mom sent me a fruitcake for Christmas for many years when I could not go back home for Christmas. I never told her that I was the only one in our family that would eat it because I was afraid she would stop sending it. I kept it in the fridge or freezer and would slice off a big piece and have it with a cup of coffee whenever I had a snack attack. Thanks, Mom, for your labor of love.
